I love creme-filled cookies, but I generally avoid store-bought cookies because they contain white flour and refined sugars. Instead, I prefer to make my own cookies at home with whole grain flour and less sugar. These heart cookies are filled with delicious Nutella, and made with spelt flour. They would be perfect for Valentine’s Day!
- 3/4 cup coconut oil
- 1/2 cup coconut sugar
- 1 egg
- 1/8 cup milk
- 1/2 tsp vanilla
- 3 cups spelt flour
- 1/2 tsp baking powder
- Cookie press, I use the Oxo Good Grips Cookie Press with the heart cookie disc
- Electric mixer
- Cookie sheets
This recipes makes about 40 cookies, so you will have about 20 total after putting them together as sandwich cookies.
1 – Preheat oven to 350 degrees F.
2 – Cream the oil and sugar together with an electric mixer.
3 – Mix in the egg, milk, and vanilla.
4 – In a separate bowl, mix together the spelt flour and baking powder.
5 – Add the flour mixture to the oil/sugar/egg mixture. Mix with a spatula until dough comes together and there is no dry flour in the bowl.
6 – Cover the bowl with plastic wrap. Refrigerate for about 30 minutes.
7 – Insert the dough into your cookie press, and press out cookies onto cookie sheets.
8 – Bake for 7-8 minutes until edges are slightly brown. After removing from the oven, let the cookies cool completely.
9 – Spread Nutella onto one cookie, then add another cookie to make a sandwich cookie. Repeat with the remaining cookies.
