Lemongrass galangal chai

Recently I made a lemongrass Thai curry, and I had leftover lemongrass and galangal.  I used these ingredients to make this delicious lemongrass galangal chai inspired by the flavors of Thailand.  The lemongrass is soothing while the galangal adds a spicy kick to the tea.

Ingredients:

  • 1 tablespoon loose leaf black tea (I like Assam tea)
  • 3/4 cup water
  • 3/4 cup milk
  • 1 inch piece of galangal, coarsely chopped (you can substitute ginger)
  • 6 inch stalk of lemongrass, chopped into 1/2 inch pieces

Directions:

(Makes 1 serving)

1-  Add the water, tea, lemongrass, and galangal to a small saucepan.  Bring the water to a boil.  Once it starts boiling, turn off the heat.

2-  Let the tea steep for about 7-10 minutes, depending on how strong you want it.

3-  Use a tea strainer to strain the tea into a mug.  Discard the tea leaves, lemongrass, and galangal.

4-  Return the pot to the stove.  Add the milk. Once the milk is warm, add the milk to the tea.
